Birria Tacos

Okay, so I have a confession. You know when you go to someone’s Instagram explore page, you can tell a lot about their interests and the type of stuff that they look at online. Well, mine is 95% food. And you know what? I am not embarrassed to admit that. I love seeing how food is made and following foodstagrammers in New York so that I know what spots to hit up while I am in certain areas. Eating food is truly one of my favorite activities, so naturally, I love to look at food as well.

That being said, I have noticed a lot on my feed lately that there was an increase in super saucy pork tacos that were then dipped in even more red sauce before eating. During class, I learned that this “food trend” is called birria tacos. I have been wanting to try one of these for so long, but I didn’t know where to go to find them, so I was literally ecstatic to see that they had them on the menu at Taqueria Coatzingo last weekend. Let me preface this by saying that I knew that this taco was going to be good, but I honestly think that it was one of the best things that I have ever eaten.

First of all, the meat was soft like brisket and it was UNBELIEVABLY flavorful. To the best of my understanding, the sauce is made from pork fat and spices and that is what gives it such a delicious flavor. Every bite was just better and better. In combination with the incomparable guacamole Taqueria Coatzingo offers, this taco was out of this world. In a SHOCKING turn of events, I will be going back to Taqueria Coatzingo.
