Similarly to just about everyone right now, I am currently trying to adapt to this quarantine-lifestyle. I think that one of the major differences for me has been the food that I have been making. I obviously want to leave my house as little as possible so when I have gone to the grocery store, I try to get things that will last me a while, but will also be delicious. I decided to stock up on eggs and beans because I love a simple egg scramble with beans and hot sauce. But then when I was in the bread aisle, they didn’t really have any loaves so I decided to get a pack of tortillas instead. And that is how my go-to quarantine meal was born.
This probably does not need an explanation, but all I do is scramble some eggs with black beans and let that cook. While that is cooking I grab a couple of tortillas from the freezer and heat them up in the microwave so they are nice and soft. Then I put the eggs and beans on the warm tortillas and top it off with hot sauce. I know this sounds so simple and obvious, but it is actually something that I had never made before this quarantine. Now, I make it for breakfast, lunch, or dinner, and it is super filling and satisfying every time. I have done some variations, adding meat and vegetables, but the simple beans and egg is still my favorite!
As frustrating as it is to be stuck inside all day, every day, this quarantine has allowed me to have more time to do creative things, cooking included. Hopefully I will hang on to some of these cooking hacks after this is all over!
