Like many of you, during this quarantine, I have been trying to be really creative with my meals. I am trying to go to the grocery store less, and when I do go, I am trying to stock up on things that will last me a while and I will be able to make something super tasty out of. In my case that means lots of frozen veggies, meat, pasta, rice, beans, and tortillas. However, sometimes, you think you have a plan when you enter the kitchen and it doesn’t go as expected!
A couple of weeks ago I bought some spicy chicken sausage to put with my vegetables and to throw in with my breakfast tacos. One night, I went to make my breakfast tacos, and I realized… I WAS OUT OF TORTILLAS!! But, I had already started making my sausage, so what was a girl to do? I looked through my refrigerator and freezer to see what I could do to salvage this meal. I had garlic, always a must. I threw that in a pan with some olive oil and let it saute for a minute. I had some mushrooms that I needed to use before they went bad so I tossed those in as well. Then I found some extra frozen spinach in my freezer so I decided to throw that in as well because, I LOVE spinach. Then I saw that I had some canned roasted red peppers, and I thought ooooh yum, pasta! So I added those to the pan and started boiling my water. Once my sausage had cooked fully through, I added that to the pan with my veggies, added the pasta, a little bit of the pasta water, salt, pepper, red pepper flakes, and then topped it off with Parmesan cheese. I don’t want to be dramatic, but it was the best thing that I have ever made and I didn’t even mean to make it! I have probably had it five times since and I 10/10 would recommend.
